Roasted Heirloom Rainbow Carrots with O'Neill's Irish Atlantic Sea Salt

I picked up this gorgeous bunch of heirloom rainbow carrots from An Tairseach Dominican Farm and Ecology Centre in Co Wicklow who run two market stalls in Bray every Saturday- one at Killruddery and another on Bray Main Street, beside the entrance to the Mermaid Theatre. All organic, locally grown produce- don't overthink anything you do with these beautiful veggies, less is definitely more!



A big bunch of heirloom carrots, all the colours!
1 tablespoon of olive oil
Half teaspoon of O'Neill's Irish Atlantic Sea Salt- Natural (or to taste!)
Some chopped chives



1. Toss the carrots- trim the tops if you need to, don't peel them- the oil and some sea salt on a baking sheet, arrange the carrots in a single layer
2. Roast at 190 degrees C, turning once, until tender and slightly browned. 25-30 minutes
3. Sprinkle with salt, chives and serve.
4. Easy eh?
