Cocoa nibs are shards of cocoa bean most often associated with the chocolate making process though more and more they are they are being used as an ingredient in their own right. With a flavour that that combines pure and bitter cocoa flavours, nibs work in both sweet and savoury dishes.  Its their texture that is particularly distinctive however, like a sliver of hard nut or crystalized sugar, they are great for adding "crunch"!

Cocoa nibs are renowned for their high levels of anti-oxidants and are a great addition to smoothies, granola, biscuit recipes, or as a garnish. They can also be used to infuse milk, cream or custard without introducing a "chocolate" colour.  Or crushed to powder in a coffee grinder or use a mortar and pestle. 

The Proper Chocolate Company, founded by Patrick and Kelli Marjolet in May 2016, produce the most gorgeous little "bean-to-bar" chocolate tasting bars in micro-batches in Dublin. Their passion for chocolate making began in 2013 while living in San Francisco. Having received a bag of cocoa beans from a local small-batch chocolate maker as a gift, Patrick decided to try his hand at making his own chocolate and an intense passion ensued and endures.

Kelli and Patrick now source the finest beans and carefully roast them to bring out their optimum flavours. When treated just right, cocoa beans release an incredible variety of savours and subtleties that you just won’t find in mass-produced chocolate!
